The Inga, an indigenous community formerly part of the northernmost Inca empire, inhabit the land here, abiding by a “cabildo” of elders who protect ancestral customs. Using the heavy, cold winds, the coffee is treated using a complex honey process that involves leaving the bean in its mucilage for 20-45 days to ensure an even drying process.
