Origin & Producer
This extraordinary coffee comes directly from Tgsit Boru, a dedicated producer in the famed Kochere district of Gedio.
Tgsit's 2.8-hectare farm, nestled at an altitude of approximately 1705 meters above sea level, is a true labor of love. The coffee trees, planted in 2008, are carefully nurtured by Tgsit, her husband, and their six children, yielding a harvest rich with history and enduring dedication.
Tasting Profile
Experience the unique bright acidity, delicate floral notes, and clean finish that only an exceptional Yirgacheffe can deliver. This coffee is lightly roasted and has notes of jasmine, lemon, and peach.
Brew Notes
After the test production roast, I waited two days off-roast and prepared a cupping to evaluate the roast results. On the table, the cup showed sparkling notes of Jasmine, peach, and lime. After the cupping, I brewed up two V60s with different dosing weights at a 17:1 brew ratio.
To brew the first one, I used 21 grams and a 3:00 brew time. The brew was crisp, delicate, and sweet, with a floral note throughout. For the second V60, I dosed 23.5 grams and used the same brew time of 3:00. The brew was lovely and clean, with more body in the cup, transitioning to a silky mouthfeel. Both brews highlighted notes of jasmine, peach, and lemon.
